Physical, Anatomical, and Biochemical Composition of Skins Cell Walls from Two Grapevine Cultivars (Vitis vinifera) of Champagne Region Related to Their Susceptibility to Botrytis cinerea during Ripening

This work investigated the structural, biochemical, and molecular characteristics of grape skin cell wall during ripening, related to susceptibility Botrytis cinerea. The comparative study between two main cultivars in Champagne region, Pinot noir Chardonnay, quantified: (1) maturity physical profile skin; (2) morphological characteristics; (3) soluble pectic polysaccharides located walls; (4) gene expression degrading enzymes (VvPME1 VvPG1) PME activity. During maturation period, skins appear different their structure composition. Chardonnay is characterized by higher relative humidity (RH) level VvPG1 expression, lower disease incidence penetrometry values, thicker walls than skins. Thus, composition sufficiently varieties from same area allow discrimination could be used better manage harvest date.
